This past fall we had the honor of catering the wedding for one of the chefs at the Hermitage Hotel. The reception was held at the Factory and they chose a really fantastic menu for us to create. The groom being a chef, had one of his co-workers create a HUGE wedding cake for his event. This was one of the largest cakes that I had ever seen. Towering at 5 tiers it was covered in a decadent white chocolate fondant with chocolate fondants accents. Andrew Manchester, pastry chef at the Hermitage created a cute grooms cake as well. The groom, a fan of Notre Dame got a custom airbrushed shamrock that was really well done.

After cutting and serving the cake we sampled one of the best cakes that I had ever ate!! That is a big deal considering that I was a pastry chef and have eaten cake from Paris to Nashville. The cake was dense layers of a moist scratch made dark chocolate with raspberry mousse and vanilla buttercream.  At Down South Delights we cater about 30 weddings a year so I get to sample a lot of cakes in the Nashville area. This cake blew my mind! It was so simple yet so decadent and delightful.

I asked Andrew if he did cakes outside of the Hermitage and he said that he was happy to handle wedding cakes too. oh yeah almost forget. He also worked at Provence and the Four Seasons in Atlanta.
